What is nuPasta?
nuPasta is a low-calorie pasta made from konjac, a root vegetable rich in dietary fibre. Because it’s fibre based, nuPasta is naturally gluten free and low carb, making it a great option for a variety of dietary lifestyles and restrictions.
A typical 200g serving of traditional pasta contains approximately 300 calories, while the same serving of nuPasta contains only 25 calories. Pair it with your favourite sauce, or one of nuPasta’s vegan sauces, for a satisfying meal under 200 calories (compared to more than 600 calories for regular pasta and sauce).

Konjac is a root vegetable native to Asia and commonly found in Japan, China, and Vietnam. The root is naturally rich in glucomannan, the fibre that gives nuPasta its unique nutritional benefits.
Shirataki, konnyaku, and nuPasta are all foods made from konjac. What makes nuPasta different is our unique formula, which includes 2% non-GMO soy to create a softer, more pasta like texture.

All nuPasta varieties contain the same pasta nutrition profile: the pasta itself contains only 25 calories per 210g serving. For meal kits, the sauce adds approximately 150 calories, keeping each complete meal under 200 calories.
Traditional wheat pasta absorbs about twice its weight in water during cooking. A 210g serving of cooked pasta has 70g of starch which contains roughly 280 calories.
Konjac, however, absorbs nearly 20 times its weight in water. A 210g serving of nuPasta contains only 6g of fibre, resulting in just 25 calories per serving.
Because nuPasta is fibre based, it has a slightly chewier texture than traditional pasta. Many people compare it to rice noodles, but lighter, since nuPasta is starch free.

Do not freeze nuPasta, as freezing permanently damages the texture.
Once opened, unused portions can be refrigerated for up to one week. Cooked nuPasta mixed with sauce can be refrigerated for up to two days and should be reheated thoroughly before eating.
Like tofu, konjac based foods must be stored in water to maintain their shape and texture.
You may notice a slight odor when opening the package. This comes from trimethylamine, a naturally occurring compound found in konjac. Simply rinse the pasta thoroughly before cooking.
nuPasta should never be frozen. Cold temperatures cause water to separate from the konjac fibres, resulting in a stringy or dehydrated texture.
